The buckwheat gnocchi are full of flavor, very simple to make, and especially if you decide to use all buckwheat, the gnocchi will be gluten-free. We added a small amount of all-purpose flour, but you can avoid it if you prefer.
We simply seasoned them with butter and sage to enhance the flavor of the buckwheat, which we really like so much, and of course, the potatoes make their beautiful appearance in these delicious gnocchi.
You can also prepare the gnocchi in advance, spread them well apart on a tray directly in the freezer, and then cook them in boiling water still frozen, just a little time and they will be ready to be sautéed in the pan with the chosen seasoning.

Ingredients for Buckwheat Gnocchi
- 12 oz potatoes
- 1 cup buckwheat flour
- 2/3 cup all-purpose flour
- 1 egg
- 2 pinches salt

Preparation of Buckwheat Gnocchi
To prepare the gnocchi, first cook the potatoes, preferably with the skin on, you can also cook them in the microwave so they don’t absorb water.
Once the potatoes are cooked, pass them through a potato ricer while still hot without removing the skin as it will stay inside.
Salt and let the potatoes cool slightly before adding the flour and mixing very well.
Finally, incorporate the egg and work quickly on the work surface until you form a smooth and compact ball.
Take a little dough at a time and form logs as thick as a thumb and cut them into 1/2 inch or slightly more thick pieces.
Dust the gnocchi and the gnocchi board with buckwheat flour, then gently roll them to give them the typical gnocchi shape.
If you don’t have a gnocchi board, you can roll them over a fork.
To cook the gnocchi, just bring plenty of lightly salted water to a boil, gently immerse them and wait for them to float.

How to Store Gnocchi
You can store them in the refrigerator well spread out on a tray and covered with plastic wrap for 1 day or freeze them to cook later from frozen.
