The baked calzone with ham and mozzarella is ideal for those who want to eat a dish similar to pizza but different. The calzone is part of the Mediterranean culinary tradition and can be filled with a variety of ingredients: salami, provolone, and each region has its typical products to add to the calzone. For example, in Veneto, sopressa is widely used, yes, it is spelled with one P, unlike the version used in southern Italy, which is spelled with two Ps.

Ingredients for baked calzone with ham and mozzarella
- 4 cups all-purpose flour
- 1 1/4 cups water
- 1 tsp fresh brewer's yeast
- 2 3/4 tbsp extra virgin olive oil
- 1 tsp salt
- 2/3 cup tomato sauce
- 5 oz mozzarella
- 1 pinch dried oregano
- 1 pinch salt
- 3 1/2 oz cooked ham

Preparation of baked calzone with ham and mozzarella
To prepare the baked calzone with ham and mozzarella, dissolve the yeast in a little water taken from the total.
Mix the remaining water with the extra virgin olive oil.
Place the sifted flour in a large bowl, add the dissolved yeast and half the water.
Start kneading with a fork or with your hands (as you prefer) and gradually add the remaining liquid.
Incorporate the salt last, turn the mixture onto the work surface and knead it to form a smooth and compact ball.
Place it in the bowl, cover with plastic wrap, and let it rise in a warm place for at least 4 hours.
Once the dough has risen, divide the dough into 2 equal parts.
Work one piece at a time into as round a shape as possible, using some flour to prevent it from sticking to the work surface.
Fill with the tomato sauce that you have seasoned with oregano and salt, place the cooked ham slices or pieces as you prefer.
Complete with the mozzarella cut into thin slices.
Close the calzone to form a half-moon, seal the edges well, and place it on a baking sheet lined with parchment paper.
Proceed now with the second calzone.
Preheat the oven to 392°F and bake the baked calzone with ham and mozzarella for 15/20 minutes.
If you want, you can spread some tomato sauce diluted with a little extra virgin olive oil on top of the calzones for an extra touch to your baked calzones.
How to store the baked calzone with ham and mozzarella
You can store the baked calzone in the refrigerator for 2 days in an airtight container.
If you prefer, you can freeze it and then thaw it at room temperature before heating it in the oven.
