Ingredients for cold Greek pasta

  • 9 oz pasta (short)
  • 3.5 oz feta (Greek)
  • 15 cherry tomatoes
  • 10 black olives
  • 2 pinches salt
  • 3.5 oz Genoese pesto

Preparation of Cold Greek Pasta

  • Prepare the Greek pasta starting with cooking the pasta itself in plenty of lightly salted water.

  • Meanwhile, pit the olives, wash and cut the cherry tomatoes in half, and cut the Greek feta into small pieces.

  • Place everything in a large bowl and season with Genoese pesto. If you wish, you can use zucchini pesto or celery pesto for a more delicate flavor.

  • Once the pasta is cooked but still al dente, drain it and immediately run it under cold running water to stop the cooking.

  • Drain it very well and add it to the dressing in the bowl, mix and if needed, season with salt and add 1 tablespoon of extra virgin olive oil.

  • Garnish with basil leaves, let it rest for at least 15 minutes to let it flavor before serving at the table.
