  • 10.5 oz swordfish (fillets)
  • 2 eggs
  • 2 1/8 cups breadcrumbs
  • 1.8 oz Pecorino Romano (grated)
  • to taste parsley
  • to taste garlic
  • to taste salt
  • to taste extra virgin olive oil
  • 3.5 oz shallot
  • 12.3 oz cherry tomatoes
  • to taste arugula
  • to taste dried oregano
  • 3.5 oz smoked scamorza (diced)
  • to taste pepper

Preparation


  • Clean and fillet the fish, cut the fillets into pieces and then..

  • Chop them with a cleaver, do not blend them, or the meatballs will be tough.

  • Cut half of the cherry tomatoes in half, and season them with oil, salt, pepper, and oregano, mix and set aside.

  • Peel the shallot and slice it, so you get circles about 1/4 inch thick.

  • Prepare the breadcrumbs seasoned with salt, pepper, grated Pecorino Romano, chopped parsley, and garlic. Mix and divide it into 2 parts.

  • In one half, add diced provola, eggs, and the chopped fish mix. Knead

  • Form meatballs

  • Now form the skewers alternating the meatballs with onion rings and cherry tomatoes cut in half, until the skewer is complete.

  • Once all the skewers are complete, bread them in the remaining seasoned breadcrumbs that we set aside.

  • At this point, either fry them in a pan or bake them in the oven.

    In this case, the oven should be preheated to 356°F with fan for about 5 minutes.

    If you want to cook them in the air fryer, after preheating it to 356°F

    Place the skewers in the basket with parchment paper and cook for 5 minutes.
