This is a dish that takes me back to my childhood, in winter, when Grandma Maria used to warm me up by preparing this dish, and I would dip bread into the yolk.
The peas and broth acted as a little soup.
Even today, I make these eggs for my grandchildren, and the tradition continues together with lots of cuddles.

- 4 Eggs
- 1 onion
- 1.5 oz extra virgin olive oil
- 1.5 cups peas
- to taste salt
- to taste bread croutons
- to taste pepper

Preparation
Let’s get cooking
Peel and chop the onion, place it in the skillet with extra virgin olive oil, and let it brown slightly
Then add the peas, if using frozen ones, thaw them first, and stir.
Let fry for 3 minutes.
Then add a cup of water, a pinch of salt, and pepper
I flavor it with homemade vegetable stock cube made with Bimby.
Let cook for 4 minutes.
After the time, taste the peas; if they seem tender, you can add the eggs.
Cover and let cook until the egg white coagulates to your liking.
I prefer the yolk very soft.
Serve immediately while hot, accompanied by croutons.

You can keep it in the fridge covered for 1 day, but the yolk will harden and lose its goodness.
