Preparation
Let’s go to the kitchen
Lemon Gratinated Ribbon Fish. Ask your trusted fishmonger to fillet the fish for you; remember, don’t throw away the bones, as you can make a truly special broth to dress spaghetti.
Prepare a baking dish with parchment paper if baking in the oven, or directly in the basket with perforated parchment paper if using an air fryer.
Place the fish fillets with the silvery side down. Grate half of the lemon zest, being careful not to grate the white part.
Chop the parsley, put it in a small bowl, and add a little oil, then spread a little with a teaspoon over the top.
Prepare the breadcrumbs with minced garlic, chopped parsley, grated Pecorino Romano, salt, and pepper, and moisten with a small cup of water and 2 tablespoons of oil
Spread the breadcrumbs over the fillets.
Grate the other half of the lemon.
OVEN COOKING
Put in the oven with grill and fan at 356°F for 15 minutes
