- 2 potatoes (boiled)
- 1/2 cup Parmigiano Reggiano DOP (grated)
- 1 egg
- 10 leaves basil
- to taste roast spices

Preparation
To make the
Bell Pepper and Chicken Ring Cake. Spread the chicken slices on a plate, add the spices and a drizzle of oil to let them marinate. Meanwhile,
Grill the bell peppers, then peel them and cut into strips. Cut off the ends and set them aside to be used in the filling.
Boil the potatoes with the skin on, then peel them.
Grill the chicken breast on a hot grill. Season with salt. You could also use boiled or rotisserie chicken.
In the chopper, place the chicken breasts cut into pieces along with the basil and some of the liquid released by the bell peppers.
Line a mold with the strips of bell peppers, alternating colors.
Prepare the filling by adding the chopped bell pepper trimmings. The Parmigiano, some chopped parsley, 1 egg, salt, and pepper
At this point, add the chicken mince and mix.
Now transfer the mixture into the mold and smooth the surface with a damp spoon.
Bake in a static oven at 356°F for 20 minutes.
Then let it cool and invert.
