Fish Medallions and Gratinated Vegetables.
Another trick to make a single dish, combining fish with the fibers of tomatoes and zucchini, and the carbohydrates of potatoes.
For this dish, you can use any sliced fish, such as tuna, swordfish, or imperial garfish, which is exactly what I used.

We will cook our medallions in the oven or air fryer.

  • 1.3 lbs imperial garfish (sliced)
  • 7 oz Potatoes
  • 7 oz zucchini
  • 14 oz tomatoes (600)
  • 1 oz pecorino romano (grated)
  • 1 sprig rosemary
  • to taste salt
  • to taste olive oil
  • to taste pepper

Preparation of Fish Medallions and Gratinated Vegetables

  • Let’s start with the slices,

    Remove the skin and central bone

    Season with salt and pepper and let rest

    15 minutes.

    In the meantime, let’s prepare the vegetables.

  • Cut the tomatoes into pieces and sprinkle with

    oregano, a drizzle of extra virgin olive oil, salt, and pepper.

  • Thinly slice the zucchini, season them like the first ones but adding mint.

  • The potatoes should also be sliced very thinly, add oil, salt, pepper, sage, and rosemary

  • Once everything is cut and seasoned, place a sheet of parchment paper on a baking tray and form rings with the cherry tomatoes.

  • Using a pastry cutter, place it in the center and position the fish, giving it a circular and compact shape.

  • Place alternate slices of zucchini and potatoes on the fish, and bake in a ventilated oven at 356°F for 4 minutes.

  • Then, take the tray out of the oven, sprinkle with pecorino, and grill at 392°F for 3 minutes

  • Preheat the air fryer for 10 min at 356°F.

    Then cook in 2 stages, first at 356°F for 5 minutes.

  • Then, take out the air fryer basket, sprinkle with pecorino, and cook again at 392°F for 3 minutes.
