Ingredients

  • 1.1 lbs tagliatelle
  • 2 l tomato sauce
  • 2 cups béchamel
  • 10.5 oz mozzarella
  • 3.5 oz grated Parmesan cheese
  • 1 large carrot
  • 1 onion
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

Tools

  • 1 Lasagna Pan
  • 1 Saucepan
  • 1 Oven

Steps

  • Let’s prepare the sauce.

Peel and finely chop the onion, peel the carrot and chop it too.

Put a generous drizzle of oil in a large saucepan and add the carrot and onion mixture, let it lightly stew over low heat, as soon as the onion withers add the tomato sauce, salt, a grind of pepper, cover with a lid and cook over medium-low heat.

While the sauce cooks, dice the mozzarella and let it drain in a colander in the refrigerator.

Check the sauce for salt, it should be nice and tasty, as it will flavor the entire preparation.

As soon as the sauce is ready, we can proceed with the preparation.

  • Add the béchamel to the sauce and stir.

Also add 80 g of grated Parmesan cheese, stir again.

Put a layer of sauce in a large baking dish.

Arrange the tagliatelle nests on the sauce, with a spoon put some sauce on each nest, making it go through the spaces, put quite a bit in this way the tagliatelle will be well seasoned in the end.

Also put the mozzarella scattered on the tagliatelle nests.

Cover everything with the remaining sauce.

Sprinkle with the remaining Parmesan cheese.

Bake at 356°F (180°C) for about 30 minutes, the tagliatelle should be cooked and there should be a bit of crust on top.

    Serve immediately.
