Sandy Potatoes in a Pan

Why bake potatoes when in a pan, following some small tricks and tips, you can have them savory, crispy on the outside and soft inside? Sandy potatoes in a pan are a simple, economical, very tasty, and flavorful side dish perfect for accompanying meats and various main courses, a tasty side dish that will make both adults and children happy in no time. Try them, they will win you over with the first taste.

Ingredients

  • 2.2 lbs potatoes
  • 2/3 cup breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste chopped rosemary
  • 1 clove garlic

Steps

  • Wash the potatoes well, peel them and cut them into chunks or not too large slices, wash them well under running water to remove the starch, then place them in a bowl full of water and leave them there while we prepare the other ingredients.

    Put the breadcrumbs in a large bowl, add the Parmesan cheese, a grind of pepper, some chopped rosemary, and a pinch of salt, mix with a spoon.


    Drain and then dry the potatoes.

    Add the potatoes to the bowl with the breading and mix them to coat them with the breadcrumb mixture from all sides.

  • Now we can proceed with cooking:

    Take a large skillet, add a drizzle of oil and the crushed garlic clove, heat it on the stove over medium heat (the secret to having crispy potatoes on the outside and soft inside is precisely to place them in a large, thick-bottomed pan that holds them not too crowded on top of each other).

    As soon as the pan is hot, add the potatoes and brown them on all sides over high heat, shaking the pan often; as soon as they are browned (about 5 minutes), lower the heat to a minimum and cover with a lid, continue cooking by shaking the pan occasionally and turning them very few times for about 20 minutes, remove the garlic and taste to check the cooking and salt, they should be crispy on the outside and soft inside. If they need to cook a little longer, continue cooking for a few more minutes.


    Serve very hot, just removed from the heat.
