Chocolate Eclair Cake (no-bake).

Simple, quick, absolutely delicious.

The Chocolate Eclair Cake is a wonderful dessert, simple to prepare and extremely indulgent. Many layers of biscuits enclose an incredibly delicious cream and are topped with a creamy dark chocolate glaze, making this dessert a unique delicacy, one of those sweets that’s hard to resist 🙂 Try it, you’ll fall in love at the first bite and make both adults and children happy.

Ingredients

  • 14 oz dry biscuits (like Oro Saiwa)
  • 1 1/4 cups custard (cold)
  • 1 2/3 cups fresh whipping cream
  • as needed cold milk (to soak the biscuits)
  • 7 oz dark chocolate
  • 7 oz liquid fresh cream
  • 1 tbsp butter

Tools

  • 1 Electric whisk
  • 1 Spatula
  • 1 Baking dish

Steps

  • You can prepare your favorite custard, or mine as indicated HERE, let it cool well, then it’s ready to prepare this very simple dessert.

    Using electric whisks or in a stand mixer, whip the cream. Once whipped, add the custard in 3 portions, continuing to whisk at low speed. Once everything is homogeneous and creamy, the filling is ready.

  • Cover a baking dish with a layer of biscuits quickly dipped in milk (you can also choose not to soak them).


    Cover with 1/4 of the cream and spread it with a spatula into an even layer.


    Quickly dip more biscuits in milk and cover the cream with another layer of biscuits.


    Cover again with 1/3 of the remaining cream, spreading it into an even layer.

    Make the other 2 layers the same way, biscuits followed by cream.


    Finish with the last layer of quickly dipped biscuits.

    Set aside in the fridge.

  • Let’s prepare the dark chocolate ganache (you can also mix milk and dark chocolate).


    Chop the dark chocolate.

    Place the cream and butter in a saucepan over low heat.

    Add the chocolate to the cream, melt everything over very low heat, stirring continuously. Once the mixture is well melted, smooth, and homogeneous, turn off the heat and stir for another minute.

    Pour the ganache over the cake, if necessary, slightly spread it with a spatula to have an even layer.

  • Let it rest for 10 minutes at room temperature, then place the chocolate eclair cake in the fridge until serving time.
