Ingredients

  • 8 sausages
  • 1.75 lbs potatoes
  • 12 cherry tomatoes (or 5 peeled tomatoes)
  • 1 onion
  • Half carrot
  • 1 clove garlic
  • 1 tbsp tomato paste
  • to taste dried oregano
  • to taste dried basil
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste chili pepper

Tools

  • 1 Skillet
  • 1 Lid
  • 1 Cutting Board
  • 1 Knife

Steps

  • Wash the potatoes, peel them and cut them into wedges more or less all the same size and not very large, rinse them again and keep them in water until needed in the recipe to remove the starch.

Peel the onion and chop it. Peel the carrot and chop it, also peel the garlic and crush it with a garlic press.

Rinse the cherry tomatoes and cut them in half or into 4 parts, if using peeled tomatoes, chop them into 3 parts.

  • Place the chopped garlic, carrot, and onion in a large skillet with a drizzle of oil and let it flavor for a moment (you can also add some chili pepper).

Add the sausages and let them flavor and brown well on all sides, as soon as the sausages are nicely browned, add the potato wedges and the chopped cherry tomatoes.

Dissolve the tomato paste in half a glass of hot water and add it to the skillet with the other ingredients, cover with a lid and let cook for 15 minutes on low heat.

After 15 minutes, gently stir the mixture, season with salt and add a dash of pepper.

Cover again with the lid and cook for another 20 minutes on low heat, stirring gently and shaking the skillet occasionally.

  • After the cooking time, check the salt and the doneness of the potatoes, add oregano and basil and if needed, let the liquid reduce by raising the heat and shaking the skillet often.

    Serve immediately.

  • The farmer’s sausage is ready to be enjoyed… Bon appétit!
