Potato and Salmon Parmigiana.

The potato and salmon parmigiana is a very simple dish to prepare, appetizing and very tasty, a perfect dish for all occasions that will win you over at the first taste.

Ingredients
- 2.6 lbs boiled potatoes (they must remain nice and firm)
- 9 oz smoked salmon (in slices)
- 2 cups béchamel sauce
- 7 oz mozzarella
- to taste grated Parmesan
- to taste salt
- to taste pepper
- to taste extra virgin olive oil
- to taste parsley
Tools
- 1 Baking Dish
- 1 Cutting Board
- 1 Knife
- 1 Colander
- 1 Oven
Steps
The potatoes should be boiled in advance (they should be cooked whole for about 20 minutes from boiling in plenty of water with a tablespoon of vinegar, they must remain nice and firm, not mushy).
Peel the previously boiled potatoes and cut them into slices about half an inch thick.
Cut the mozzarella into small cubes and let it drain in a colander.Chop the parsley.
Grease a rectangular baking dish with some oil and sprinkle with a bit of salt.
Place a layer of potatoes in the baking dish and cover with a light layer of béchamel sauce, add some chopped parsley, a pinch of pepper, pieces of salmon, and scattered mozzarella cubes.
Cover again with potatoes, lightly salt them, add a layer of béchamel, parsley, salmon, and mozzarella as before.
Continue this way until all ingredients are used up, ending the last layer with potatoes, a pinch of pepper, a light layer of béchamel, and grated Parmesan.
Bake at 350°F for about 20 minutes, until the top is nicely golden.
Serve.
