Country-style chicken drumsticks are a rustic second course very simple to prepare, rich, succulent, and very tasty; chicken prepared this way becomes very tender and juicy and served together with potatoes you will have a complete dish that will be the joy of the whole family, try it with its goodness it will win you over at the first taste.

Ingredients

  • 8 chicken drumsticks
  • 1.3 lbs potatoes
  • 12 cherry tomatoes (or 5 peeled tomatoes)
  • 1 tbsp tomato paste
  • 1 carrot
  • 1 onion
  • 1 clove garlic
  • to taste salt
  • to taste pepper
  • to taste extra virgin olive oil
  • to taste oregano
  • to taste dried basil

Steps

  • Wash the potatoes, peel them, and cut them into wedges of the same size and not very large, rinse them again and keep them in water until needed in the preparation to remove the starch.


    Wash the chicken drumsticks, dry them with a paper towel, and flame them to remove any remaining feathers.


    Peel the onion and chop it. Peel the carrot and chop it, peel the garlic and crush it with a garlic press.

    Rinse the cherry tomatoes and cut them in half or into 4 parts, if using the peeled ones, cut them into 3 parts.

  • In a large pan, put the chopped garlic, carrot, and onion along with a drizzle of olive oil and let them sauté a little (you can also add some chili pepper).

    Add the chicken drumsticks and let them brown well on all sides, once they are nicely browned, add the potato wedges and the chopped cherry tomatoes.

    Dissolve the tomato paste in half a cup of hot water and add it to the pan with the other ingredients, cover with a lid and let it cook for 20 minutes on low heat.

    After 20 minutes, gently stir everything, season with salt, and add a grind of pepper.

    Cover again with the lid and cook for another 20 minutes on low heat, stirring gently and shaking the pan every now and then.

  • After the cooking time, check the salt and the doneness of the potatoes, add oregano and basil, and if necessary, let the sauce reduce a little by increasing the heat and shaking the pan often.

    Serve immediately.
