Rice and cabbage, grandma’s Neapolitan recipe.
Simple, healthy, tasty.
Rice and cabbage, or as we call it in Naples “ò virz’ e rise” is a traditional peasant dish that is very easy to prepare, inexpensive, and delicious. A nutritious dish that comforts and warms on cold winter days.
This rice and cabbage recipe is typical of traditional Neapolitan cuisine, and this is my grandma’s old recipe 🙂

Ingredients
- Half head savoy cabbage
- 1 cup rice
- 1 onion
- Half carrot
- 4 cups vegetable broth
- 1/2 cup grated parmesan
- to taste extra virgin olive oil
- to taste pepper
- to taste salt

- 1 Saucepan
Steps
Clean the savoy cabbage by removing the outer leaves, cut it into strips, and then rinse it well under running water.
Clean the carrot and dice it.
Peel the onion and chop it.
In a large saucepan, pour a little oil and add the carrot and onion, let it soften.
Add the cabbage, a ladle of broth, cover with a lid, and cook on low heat for about 20 minutes until the cabbage is soft.
At this point, add the rice and cover with broth. Start cooking the rice, stirring occasionally, and adding hot broth as it absorbs, just like you would for risotto.
Cook the rice for the time indicated on the package, then salt, add a grind of pepper, check the cooking and the broth, it should remain creamy, like a minestrone.
Turn off the heat, add the parmesan, and stir.
Let it rest for a minute, then serve.
