Pistachio-Crusted Chicken Breast.
Simple, extremely tender, and flavorful.
The Pistachio-Crusted Chicken Breast is a delightful and savory main course that is quick and easy to prepare. Cooked this way, chicken breast does not become dry and tough but remains tender and very tasty, and its pistachio coating is fabulous; a perfect dish for the whole family, try it, it will win you over at the first bite 🙂

Ingredients
- 2 lbs chicken breast (not thinly sliced)
- 5 cups stale dry bread
- 3.5 oz chopped pistachios
- 2 tbsp grated Parmesan cheese
- as needed extra virgin olive oil
- as needed salt
- as needed pepper
Tools
- 1 Mixer
- 1 Oven
Steps
Coat the chicken with a drizzle of oil, salt, and massage the chicken to season it on all sides and leave it as is while we prepare the other ingredients.
Preheat the oven to 350°F (static).
Line a large baking sheet (I use the one provided with the oven) with a sheet of parchment paper.Coarsely chop the stale bread in a mixer.
Place the bread in a bowl, add the pistachios, a pinch of pepper, and grated cheese, mix with a spoon, add a tablespoon of oil and mix again (for an extra touch you can also add the grated zest of a lemon).
Lightly oil the parchment paper and place the chicken breast slices on it close together.
Cover the chicken with the prepared breading.
Bake in the lower-middle part of the static oven at 350°F for about 20 minutes, depending on your oven. The chicken should be cooked, and the breading should be golden.
Serve immediately.
