Meatballs and stewed potatoes are a very simple dish to prepare, nutritious and very tasty, a main course and side dish that will quickly make both adults and children happy.

Ingredients
- 14 oz ground meat
- 1.75 oz stale bread crumbs
- 3.5 oz grated Parmesan cheese
- 3 large potatoes
- 2.5 cups tomato puree
- to taste parsley
- to taste extra virgin olive oil
- to taste salt
- to taste pepper
- to taste basil (or oregano)
- 1 clove garlic
- 1 onion
- 2 eggs

Steps
Let’s prepare the potatoes:
Rinse the potatoes, peel them with a peeler, cut them in half, and then into slices about 0.4 inches thick, rinse them again.
Place them in a pot, cover with plenty of water, salt and bring to a boil, cook them for 8 minutes from the time it starts boiling.
While the potatoes are cooking, let’s prepare the meatballs: chop some sprigs of parsley.
Soak the bread in water, squeeze it well, shred it with your hands and place it in a large bowl.
Add the meat to the bread, the chopped garlic (you can also omit it), the grated cheese, the chopped parsley, the eggs, adjust salt and pepper to taste, mix all ingredients well with your hands until well combined.
Form the mixture into meatballs.
Peel and chop the onion.
Place a drizzle of oil in a large pan, add the chopped onion and let it soften a bit, add the tomato puree, adjust salt and pepper, cook the sauce for a couple of minutes on low heat, then add the drained potatoes and 1 oz of water, continue cooking for a few more minutes, stir and add the meatballs, cover with a lid and continue cooking for about 20 minutes on low heat, shaking the pan occasionally and gently turning the meatballs halfway through, being careful not to crumble them.
Check the potatoes at the end of cooking, raise the heat if necessary to dry the sauce, adjust salt and add some basil or oregano.
Serve immediately.
