Struffoli, the perfect recipe to make them in an air fryer, fried or baked is a recipe you cannot miss, you will get soft, delicious struffoli and once decorated they are beautiful. Unlike the traditional recipe, this one contains a bit of baking powder to prevent them from hardening, and remember, when baking them, do it quickly without letting them get too dark. They might seem too soft, but as they cool, they will reach the right consistency 🙂

Ingredients
- 2 cups all-purpose flour
- 2 large eggs
- 3 tbsps melted butter
- 2 tsps anise (or limoncello, rum, strega)
- 1/4 cup sugar
- grated zest of half an orange (untreated)
- 1 pinch salt
- 1.5 tsps baking powder
- 1 cup honey
- 1/4 cup sugar
- juice of half an orange
- Half shot glass anise
Tools
- 1 Pastry Board
- 1 Air Fryer
Steps
Place the eggs, liquor, sugar, butter, sifted baking powder, grated orange zest, a pinch of salt in a bowl and mix with a fork.
Add the sifted flour little by little until you form a homogeneous, smooth dough that does not stick to your hands. If needed, add a bit more flour.
Cut small pieces from the dough, roll them into very thin logs with your hands, and cut them into small pieces about 1/2 inch, placing them apart on a lightly floured cloth.Let’s move on to cooking, this recipe can be baked, air-fried, or fried, and I’ll show you how.
Frying: Heat plenty of seed oil in a saucepan with high edges. When the oil reaches the right temperature (338°F), fry the struffoli a few at a time, turning them often with a skimmer to brown them evenly. Once golden, remove them from the oil and drain on frying paper.
Baked: Preheat the oven to 375°F. Place the struffoli on the baking tray lined with parchment paper a little apart. Bake for about 10 minutes, they should be golden and a bit soft. As they cool, they will reach the right consistency.
Air fryer cooking: Preheat the air fryer at 375°F for 3 minutes. Place the struffoli in the basket (without parchment paper), spray lightly with seed oil, and cook for 5 minutes, then shake the basket and cook for another 3 minutes. In the end, the struffoli should be golden and a bit soft; they will reach the right consistency as they cool.
Struffoli in the air fryer should be cooked in several batches.
Once all the struffoli are cooked and cool, we can prepare the honey glaze.
On the stove, melt 1 cup of honey with 1/4 cup of sugar, add half a shot glass of liquor. When it boils, turn off the heat, add the juice of half an orange, stir and pour over the struffoli.
While still hot, decorate with sprinkles and cherries.

Place the eggs with sugar, and liquor in the bowl for 20 sec. / speed 3.
Add the pinch of salt, grated orange zest, baking powder, and flour, work for 4 min. / Knead speed.
