Walnut and Chocolate Cookies

Simple, quick, delicious.

The walnut and chocolate cookies are delightful pastries with a rustic and delicate flavor. They are very easy to prepare, crumbly, quick, and delicious, perfect for gifting or enjoying with a good coffee, tea, or hot chocolate. Try them, and they will win everyone over at first bite.

Ingredients

  • 7 oz walnuts (weighed already shelled)
  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 egg
  • 5 oz butter (at room temperature)
  • as needed hazelnut spread (Nutella)

  • 1 Work Surface
  • 1 Oven

Steps

  • First, in a mixer, blend the walnuts with the sugar until they become powder (I didn’t blend too much to make the cookies more rustic, so I left many walnuts coarsely ground).


    Put the flour in a bowl, add the ground walnuts with sugar, and mix with a fork, also add the egg and butter, and quickly knead everything as you usually do for shortcrust pastry until you get a smooth and compact dough (if you need a bit more flour, you can add it).

  • Line a baking tray with parchment paper.
    From the dough, form many balls slightly larger than a walnut and place them on the tray, spaced apart.


    Once you have prepared all the cookies, flatten them slightly and make a hole in the center with the handle of a wooden spoon. Do the same for all the cookies.

  • You can put the tray in the fridge for 30 minutes.

    After the time, preheat the oven to 356°F static and let it heat well, then bake the cookies in the central part for about 12 minutes (the time depends on your oven, they should lightly golden on the surface as you see in the photo).


    Remove from the oven and let cool.

  • Fill each cookie with a nice dollop of hazelnut cream.

    The walnut and chocolate cookies are ready.

  • Put the walnuts together with the sugar in the bowl 20 sec./Speed 6.


    Add the flour, egg, and butter 40 sec/Speed 4.


    Transfer the dough onto a floured work surface and quickly compact it all together as you usually do for shortcrust pastry until you get a smooth and compact dough (if you need a bit more flour, you can add it).

    Prepare the cookies and continue as indicated above.

  • The walnut and chocolate cookies are ready to be enjoyed… Enjoy your dessert!
