Simple, fragrant, delicious.

Almond Pastries are delightful tea treats, very easy to prepare, fragrant, crisp, and delicious; These pastries taste like almond paste but are less sweet, more crumbly, and with a completely different recipe. Try them, they will win you over at the first bite 😊 and they also make a great gift idea for Christmas. Sealed in food bags and then in a cookie tin, they keep well for a long time.

Ingredients

  • 7 oz blanched almonds
  • 6 oz sugar
  • 2 cups all-purpose flour
  • 1 medium egg
  • 5 oz butter (At room temperature)
  • 1 vial Almond flavoring (Or half a tablespoon if not in vial)
  • 1 tbsp rum
  • as needed powdered sugar
  • as needed whole almonds

Tools

  • 1 Blender
  • 1 Oven

Steps

  • Place the almonds and sugar in the bowl of the electric blender and blend until reduced to flour.


    Mix the almond mixture with the flour.

    Add the butter and start working with your fingertips.

    Also add the rum, almond flavoring, and egg, and knead all the ingredients together quickly as you would for a shortcrust pastry.

    Wrap in plastic wrap and refrigerate for 30 minutes.

    After the resting time, preheat the oven to 356°F (static).

    Quickly form balls with your hands (to avoid heating the dough) that are slightly larger than a walnut and roll them in powdered sugar.

    Place them spaced apart on a baking tray lined with parchment paper.

    Once all the treats are ready, place an almond in the center of each, pressing lightly (if it’s very hot, put the tray with the cookies in the fridge for 30 minutes before baking, in this case turn on the oven afterward).


    Bake in the hot oven at 356°F for about 15 – 20 minutes. Each oven is different; the cookies should be lightly golden.

  • WITH THE BIMBY:

    Place the almonds and sugar in the bowl 1 minute/speed 8.


    Add the flour 30 sec/speed 8.


    Add the egg, butter, almond flavoring, and rum 3 minutes/Spiga.

    Transfer the dough to a bowl, compact it quickly, cover it with food wrap, and refrigerate for 30 minutes.

    After the resting time, preheat the oven to 356°F (static).

    Quickly form balls with your hands (to avoid heating the dough) that are slightly larger than a walnut and roll them in powdered sugar.

    Place them spaced apart on a baking tray lined with parchment paper.
