The Apple and Almond Cake is one of the softest, moistest, most fragrant and delicious apple cakes ever tasted, a pantry cake that can be prepared with an electric whisk in just a few minutes, and is perfect for breakfast or a snack for all ages.

Ingredients

  • 4 large eggs (at room temperature)
  • 1 3/4 cups all-purpose flour
  • 1/2 cup potato starch
  • 3/4 cup sugar (1/2 cup for a less sweet version)
  • 1 cup ground almonds
  • 1/2 cup yogurt (vanilla or citrus at room temperature)
  • 1/2 cup corn oil
  • 1 vial almond flavoring
  • grated zest of one untreated lemon
  • juice of 1 lemon
  • 1 pinch salt
  • 2 tablespoons rum
  • 1 tablespoon baking powder
  • 3 eggs
  • 1/3 cup sliced almonds
  • as needed powdered sugar

Steps

  • Peel and core the apples, then slice them thinly and place them in a bowl with the lemon juice.

    Butter a pan of 9-10 inches.

    Mix the flour and potato starch with the granulated sugar, almonds, and sifted baking powder.

    With electric whisks or a stand mixer, beat the eggs with a pinch of salt until the mixture is fluffy and light.

    Gradually add the oil, a little yogurt at a time, the rum, almond flavoring, and lemon zest.

    Turn off the mixer or stand mixer and gently fold in the flour mixture gradually using a spatula.

    Preheat the oven to 320°F.

  • Pour half the batter into the pan, arrange half the apples on top, and lightly sprinkle with powdered sugar.

    Cover with the remaining batter and apples, add the almond slices, and sprinkle with sugar.

    Bake in the lower part (just above the base) at 320 degrees for about 45 minutes.

    Check with a toothpick: if it comes out dry, the cake is ready; otherwise, bake a few more minutes.

    Let cool and remove the apple cake from the pan onto a platter, sprinkle with powdered sugar.

    Add half of the flour, almonds, starch, and baking powder mixture and mix for 20 seconds/speed 3, scrape with a spatula from the edges to the center.

    Add the remaining powders for 20 seconds/speed 3.

    Scrape again and mix for another 30 seconds/speed 2.

    The batter is ready.

    Preheat the oven to 320°F.

  • Pour half the batter into the pan, arrange half the apples on top, and lightly sprinkle with powdered sugar.


    Cover with the remaining batter and apples, add the almond slices, and sprinkle with sugar.


    Bake in the lower part (just above the base) at 320 degrees for about 45 minutes.
