Jam Rose Cake.
Simple, super soft, delicious.
The Jam Rose Cake is a very simple dessert to prepare, beautiful to look at and delicious to eat, a super soft brioche with a jam filling that makes it even more good and delicious, a perfect dessert for breakfast or a snack accompanied by a coffee or a nice tea.

Ingredients
- 2 cups all-purpose flour
- 2 cups Manitoba flour
- 0.4 cups milk (at room temperature)
- 0.6 cups sugar
- 3 eggs (at room temperature)
- zest of one untreated lemon
- 3 oz butter (soft, should be taken out of the fridge in advance)
- 1 pinch salt
- 0.5 oz active dry yeast
- 10.5 oz jam (your choice, I used apricot jam)
Tools
- 1 Stand Mixer
- 1 Baking Pan
- 1 Pastry Board
- 1 Rolling Pin
- 1 Spatula
Steps
Dissolve the yeast in room temperature milk.
In the bowl of the stand mixer or in a bowl for working by hand, put the flour (both all-purpose and Manitoba), sugar, butter, grated lemon zest, eggs, and the milk with yeast. Start kneading, add a pinch of salt, and knead well for a few minutes until it becomes a smooth and homogeneous dough that doesn’t stick to your hands.
Cover with plastic wrap and let rise for 2 hours.With the Bimby:
Put the milk and yeast in the bowl 20 sec / speed 2.
Add the flours, grated lemon zest, eggs, sugar, butter, start to work 2 minutes / dough setting.Add a pinch of salt and work another 4 minutes / dough setting.
Place the obtained dough in a large bowl, cover with plastic wrap and let rise for 2 hours.Let’s prepare the rose cake:
After the rising time, preheat the oven to 356°F.Butter a 10-inch springform pan.
Take the dough and on a lightly floured pastry board, roll it out with a rolling pin into a rectangle about 0.16 inches thick.
Spread the jam over the entire surface with a spatula, roll it up, cut into pieces about 1.57 inches high, slightly close each piece underneath, and place them upright in the buttered pan spaced apart.
Let them rise until they meet (it took me 2 hours, but the day is cold, adjust according to the external temperature).
Once well risen, bake in a preheated oven in the middle rack at 356°F for about 30 minutes, check the cooking with a toothpick.
Once baked, remove from the oven and let cool.
