Fried Porcini Mushrooms.
Simple, crunchy, very tasty.
Fried Porcini Mushrooms are a very delicious and flavorful dish, we all know everything fried is good, but porcini are particularly so. (You can also use other types of mushrooms, but porcini are known to have an edge) The taste of the mushrooms with that crunchy crust is something heavenly. Simple and quick to prepare, they are the perfect autumnal second course when accompanied by a simple salad, but they can also be a delightful appetizer; it’s your choice. However you serve them, they will always be a success. Just imagine, today I fried 1.75 lbs of beautiful porcini just bought from the farmhouse, we were only two and we devoured them all 🙂
If you don’t have fresh porcini you can also use frozen sliced ones, just let them thaw completely in a colander and then proceed as per the recipe.

Ingredients
- 5 porcini mushrooms (if they are small, a few more, about 1.1 lbs)
- 3 eggs
- 1 tablespoon grated Parmesan cheese
- to taste flour
- to taste breadcrumbs
- to taste pepper
- to taste salt
- to taste peanut oil

- 1 Skillet
Steps
Clean the porcini mushrooms by removing the end of the stem with a small knife, then wipe them with a damp cloth to remove any traces of soil or leaves.
Separate the caps from the stems. Slice the caps about 0.4 inches thick and cut the stems into chunks.
In a bowl, beat the eggs with the grated Parmesan, a pinch of salt, and a grind of pepper.
Once all the ingredients are ready, we can bread our mushrooms.
Place flour in one dish and plenty of breadcrumbs in another.
Coat the mushrooms one by one in the flour, making sure it adheres evenly on all sides.
Then roll them in the beaten eggs.
And finally, coat them with breadcrumbs.
Place them on a tray.
Continue breading all the mushrooms the same way: flour, eggs, breadcrumbs until they’re all ready.
Heat a generous amount of oil in a skillet, once the oil reaches the temperature (350°F, you can test it with a small piece of breading, as soon as you drop it in the oil, bubbles should form immediately around it), fry the mushrooms a few at a time over medium heat until they are well golden on both sides.
Drain on paper towels.
Fry all the mushrooms in the same way.
Fried porcini mushrooms are ready to be enjoyed, they are excellent whether hot, warm, or even cold. You can serve them as they are or with a grind of pepper and a bit of salt.
