Spaghetti with Yellow Cherry Tomatoes and Bottarga.

Simple, quick, and very tasty.

The Spaghetti with yellow cherry tomatoes and bottarga is a very simple and quick dish to prepare, yet at the same time refined and very tasty. The addition of arugula makes this dish even more delicate and flavorful (you can also skip the arugula, but I recommend trying it this way); a perfect dish for any occasion that will win everyone over at the first taste.

Ingredients

  • 14 oz spaghetti
  • 14 oz yellow cherry tomatoes
  • 1.8 oz bottarga (powdered or to grate)
  • 1 onion
  • 1 clove garlic
  • 1 handful of arugula
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

  • 1 Frying Pan
  • 1 Pot
  • 1 Lid

Steps

  • Rinse the cherry tomatoes and cut them in half.

    Put a pot with plenty of water on the stove to cook the spaghetti.

    Peel the onion and finely chop it, also peel the garlic.

    Put a generous drizzle of olive oil in a large pan and add the onion and garlic, as soon as the onion becomes transparent add the cherry tomatoes, cover with a lid and let them wilt.

  • Wash the arugula well and chop it coarsely.

    As soon as the cherry tomatoes are cooked remove the garlic and add the arugula, adjust the salt, add a grind of pepper and turn off the heat.

  • Cook the spaghetti in the salted boiling water until al dente (3 minutes less than the time stated on the package).

    Turn the heat back on under the cherry tomatoes.

    Using tongs, take them and add them to the cherry tomatoes, add a little pasta cooking water and toss for a couple of minutes to complete the cooking of the spaghetti, stirring continuously and adding some spoonfuls of pasta cooking water if necessary.

    The spaghetti should remain al dente, at this point turn off the heat, add the bottarga, mix to combine everything.

  • Serve immediately.
