Ingredients for shortcrust pastry:
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 cup butter
- 1 egg
- Half pod vanilla
- 1 pinch salt
- 4 cups whole milk
- 5 eggs
- 1 cup sugar
- 1/2 cup unsweetened cocoa powder
- Half pod vanilla
- 1 shot spiced rum
Tools
- 1 Blender
- 1 Pastry Board
- 1 Rolling Pin
- 1 Pan
- 1 Oven
Steps
First, let’s prepare the pastry:
Make the classic flour well on the pastry board, add the sugar and form a well in the center where you will put the butter in pieces, work with your fingertips until the mixture is crumbly.
Add the egg, a pinch of salt, and the seeds of half a vanilla pod, knead everything together quickly to compact the dough, (you can also prepare the pastry with a stand mixer with the K hook) wrap the shortcrust pastry in food wrap and store it in the fridge.
While the pastry is in the fridge, boil the milk with a vanilla pod from which you have removed the seeds for the pastry, as soon as it boils, turn off the heat and let it cool.
Once the milk is well cooled, add the eggs, vanilla seeds, liqueur, cocoa, and sugar, blend everything together.
Preheat the oven to 350°F and butter a 28 cm springform pan (without parchment paper).
Take the pastry from the fridge, roll it out on a lightly floured pastry board and with the obtained sheet cover the pan including the edges.
Arrange the ladyfingers in a herringbone pattern, cutting them to fill the entire mold covered with pastry and pour the milk and cocoa mixture over it, let it rest for 5 minutes, push the ladyfingers down if they have risen slightly.
Bake at 350°F static in the lower part of the oven (the rack just above the base) for about 35 minutes, the edges should be well golden.
Once cooked, remove the chocolate Beneventan tart from the oven and let it cool, before serving sprinkle with powdered sugar.
