Simple, quick, and very tasty.

Killer Spaghetti is a first course that originated in Puglia, more precisely in Bari, a dish that in its simplicity is very particular for its spicy, burnt flavor and crunchy texture.

Their main characteristic is the pan cooking, where the spaghetti is cooked directly with the sauce by adding salted boiling water little by little. This dish is very simple, quick, and delicious, perfect for any occasion and any season. Try them and see how good they are 🙂

Ingredients

  • 14 oz spaghetti
  • 2 cups tomato puree
  • 2 cloves garlic
  • 2 dried chili peppers
  • to taste extra virgin olive oil
  • to taste salt
  • salted boiling water

Tools

  • 1 Pan
  • 1 Wooden Fork
  • 1 Pot

Steps

  • Put a pot with about 1.3 quarts of water on the heat, salt it a little, and bring to a boil.

    First, peel the garlic cloves and slice them. Mince the chili pepper (if you want them less spicy, you can use a little less, but it is an essential ingredient).

    Take a large pan, preferably iron (at least 14 inches in diameter), and add a generous amount of oil, it should cover the entire bottom of the pan.

    Add the garlic and chili pepper and heat everything until bubbles start to form around the garlic.

  • At this point, add the tomato puree, adjust the salt, and start cooking it for 5-7 minutes on high heat, it should thicken a bit.

  • At this point, distribute the spaghetti in the pan, laying them not too much on top of each other.

  • Start cooking the spaghetti until they stick to the bottom, then flip them to the other side.

  • Continue cooking the pasta in a frying manner until it becomes nicely toasted, the spaghetti should form a brown crust.

  • Once the spaghetti is well toasted (as in the picture below), add a ladle of boiling water and start the pasta cooking process.

  • Continue stirring and adding water until the pasta is cooked to a nice al dente.

  • At this point, check the salt, turn the heat up to the maximum, and let the pasta flavor until it is well blended and with toasted parts, stirring continuously.
