Ingredients
- 2 1/4 cups all-purpose flour
- 3/4 cups walnut kernels
- 2/3 cups sugar (1/2 cup for a less sweet version)
- 9 tbsps butter (at room temperature)
- 2 eggs
- 1 tsp baking powder
- 1 pinch salt
- Half teaspoon vanilla extract
- 1/2 cups chocolate chips (placed in the freezer the night before)
- as needed corn flakes
Tools
- 1 Blender
- 1 Electric whisk
- 1 Bowl
- 1 Spatula
- 1 Baking tray
- 1 Bowl
- 1 Oven
Steps
In a mixer, blend the walnut kernels with sugar until powdered.
Place the sifted flour in a large bowl, add the blended walnuts, a pinch of salt, and sifted baking powder, mix.
Add the butter in pieces, eggs, and vanilla, using an electric whisk with a spiral hook, mix everything well. The dough should be sticky (you can also do it by hand or with a stand mixer with a K hook).
Add the chocolate and mix with a spatula to incorporate into the dough.
Cover a baking tray that fits in the fridge with parchment paper.
Place corn flakes in a bowl.
Let’s prepare the cookies, use a spoon to take some dough the size of a large walnut, helping with another spoon, drop it into the corn flakes.
Roll the cookie in the corn flakes so they stick well on all sides.
Place the resulting treats on the baking tray with the parchment paper, spaced apart.
Continue to form the cookies until the dough is finished; you might need 2 trays if the first isn’t big enough.
Place the tray in the fridge for at least 30 minutes.
After the resting time, preheat the oven to 350°F.
Once the oven is hot, take the cookies from the fridge and bake them for about 15 minutes, depending on your oven, until golden.
Let cool without removing them from the tray.
Once cool, you can enjoy them.
