Country-style Potatoes.
Simple, tasty, very flavorful.
Country-style potatoes are a very tasty and flavorful dish, prepared simply and quickly. Following my cooking tips, you’ll have crispy potatoes on the outside and soft on the inside, flavored with crispy bacon and onion that will win everyone over at the first bite.
Country-style potatoes are excellent as a side dish to accompany meat main courses, cold cuts, mozzarella, or cheeses, but by adding a couple more potatoes, they are also perfect as a unique dish for a tasty and flavorful dinner 🙂

Ingredients
- 2.2 lbs yellow-fleshed potatoes
- 1 large red onion (or 2 smaller ones)
- 7 oz diced bacon (I used smoked bacon)
- 1 clove garlic
- 2 tablespoons grated cheese (to taste: mixed, pecorino, grana, or parmesan)
- Half tablespoon breadcrumbs
- to taste salt
- to taste pepper
- to taste rosemary

Steps
Peel the onion and slice it.
Wash the potatoes well, peel them, and cut them into wedges not too large. Rinse them well under running water to remove the starch and dry them well with a clean towel.
Place the potatoes in a bowl and season with a generous drizzle of oil, salt, and a grind of pepper.
Take a large pan and heat it over medium flame. Add the bacon and let it brown by itself. Once crispy, remove and set aside.
Without washing the pan, place the potatoes in a single layer. Also add the garlic clove in its skin (unpeeled but crushed).
Brown the potatoes on both sides. Once browned (it will take about 5 minutes), reduce the heat to low and cover with a lid (after browning the potatoes, I transfer the pan to the coffee’s small flame and cook there on medium flame), shaking the pan every now and then and stirring the potatoes very little to avoid crumbling.
After about twenty minutes of cooking, add the sliced onion.
Continue cooking by shaking the pan a little more often. They should cook for another 10 minutes, then check the potatoes with a fork. If they are soft enough, move them to a higher flame, remove the garlic clove, add the bacon and the well-washed and chopped rosemary, and continue cooking for a few more minutes on high flame, shaking the pan often to brown everything well. In the end, the potatoes should be crispy on the outside and soft on the inside. If they need to cook a little more, continue cooking for a few more minutes.
Add the grated cheese and a very light sprinkle of breadcrumbs, shake the pan to mix everything and serve.
Serve very hot, just removed from the heat.
