Chocolate Coffee Salami.
Simple, quick, delicious.
Chocolate salami, also known as Turkish salami or king’s salami, goes by different names depending on the part of Italy you’re in. It’s a very simple preparation that requires no baking, perfect for any time of the day but also great for parties or gatherings with children. Excellent in all its varieties, from the classic to the enriched ones like coconut, or the lighter versions like ricotta. No matter how you make it, it’s always a delight.
Today I present the chocolate coffee salami, a perfect version for coffee lovers, but also for those like me who are not fans. The coffee makes this dessert very aromatic, and as we know, chocolate and coffee are one of the best combinations. They pair divinely in this dessert, with the coarse biscuits adding a special crunch, all in a dessert that takes just 10 minutes to prepare, stores in the fridge, and is exceptionally delicious.

Ingredients
- 8.8 oz dry biscuits
- 7.1 oz dark chocolate 55%
- 1/4 cup unsweetened cocoa powder
- 1/3 cup sugar
- 1/4 cup coffee (from a moka pot)
- 1/2 cup butter
- as needed milk
- 1/2 teaspoon coffee powder (the one used for moka)

- 1 Bowl
- 1 Saucepan
- 1 Spatula
Steps
Break apart the biscuits (set aside 1/4 broken) and place the rest in a clean food bag. Crush them with a rolling pin, leaving them very coarse, and transfer both parts to a large bowl.
Break the chocolate into pieces and chop it.
Put the butter and coffee in a saucepan and melt the butter over very low heat. Once melted, add the chocolate and stir continuously until completely melted.
Transfer the mixture to a large bowl, add the sifted cocoa and sugar, and mix with a spatula.
Also add the coffee powder and mix again.
Gradually add the biscuits, mixing with the spatula. If needed, add a little milk; you should obtain a moldable mixture.
Sprinkle a sheet of parchment paper, plastic wrap, or aluminum foil with powdered sugar, pour the mixture onto it, and compact it well with the help of the paper, shaping it into a salami form.
Wrap the salami with the paper, seal the ends, and refrigerate for at least 3 hours (I left it overnight).
After the resting time, carefully remove the paper, lightly sprinkle with powdered sugar, slice your chocolate coffee salami, and serve.

Without rinsing the bowl, place the broken chocolate inside and blend for 10 sec/speed 6. Use a spatula to scrape down the chopped chocolate from the sides, add the butter in pieces, and set the Bimby to 5 Min. / 50°C / Speed 2.
Add the coffee, sugar, coffee powder, and cocoa for 30 sec/speed 3.
Transfer the mixture to a large bowl.
Gradually add the biscuits, mixing with the spatula. If needed, add a little milk; you should obtain a moldable mixture.
Sprinkle a sheet of parchment paper, plastic wrap, or aluminum foil with powdered sugar, pour the mixture onto it, and compact it well with the help of the paper, shaping it into a salami form.
Wrap the salami with the paper, seal the ends, and refrigerate for at least 3 hours (I left it overnight).
