Orange Cloud Cake

Simple, super soft, delicious.

The Orange Cloud Cake is a pantry cake that is very simple to prepare, aromatic, as soft as a cloud, and so delicious. One of those quick cakes, prepared with few wholesome ingredients, mixed with electric beaters in 5 minutes, and then put straight in the oven. Baking time, and you’ll take out one of the softest and most delicious orange-scented cakes you’ve ever tried 🙂

Ingredients

  • 4 large eggs (at room temperature)
  • 160 ml orange juice (about 2 oranges)
  • 220 g sugar (120 g for a less sweet version)
  • 220 g all-purpose flour
  • 150 g potato starch
  • 140 ml corn oil
  • 1 tsp vanilla extract
  • grated zest of one orange (untreated)
  • 1 pinch salt
  • 1 packet baking powder (16 g)
  • to taste powdered sugar (optional)

  • 1 Electric whisk
  • 1 Bowl
  • 1 Sieve
  • 1 Spatula
  • 1 Bundt pan
  • 1 Oven

Steps

  • Preheat the oven to 170°C (340°F) static and butter a 24 cm (9.5 inches) bundt pan.

    Using an electric mixer, beat the eggs with the sugar and a pinch of salt until the mixture is fluffy and foamy. You can also use a stand mixer.

    While mixing, add the oil, vanilla essence, grated orange zest, then also the orange juice gradually.

    Sift the flour with the potato starch and baking powder and add it to the egg mixture by hand using a spatula.

    Once the batter is homogeneous, pour it into the buttered pan.

    Bake at 170°C (340°F) for about 45 minutes. Check with a skewer (if it’s cooked, it should come out dry; otherwise, continue baking for a few more minutes).

    Let the cake cool, then place it on a tray and, if desired, sprinkle with powdered sugar.

  • Butter a 24 cm (9.5 inches) bundt pan.

    Preheat the oven to 170°C (340°F) static.

    Place the butterfly attachment in the bowl.

    Separate the yolks from the whites.

    Put the egg whites with a pinch of salt in the bowl 3 minutes/speed 4.

    Set aside in a bowl.

    Put the yolks in the bowl with the sugar and beat 2 minutes/speed 4.

    Remove the butterfly and add the orange juice and oil 10 sec/speed 3.

    Also add the flour, potato starch, vanilla essence, and grated orange zest 50 sec/speed 3.

    Spatula and add the baking powder 20 sec/speed 3.

  • Turn off the Bimby and add the egg whites a little at a time, mixing with a spatula from bottom to top.

    Once the batter is homogeneous, pour it into the buttered pan.

    Bake at 170°C (340°F) for about 45 minutes. Check with a skewer (if it’s cooked, it should come out dry; otherwise, continue baking for a few more minutes).

    Let the cake cool, then place it on a tray and, if desired, sprinkle with powdered sugar.
