  • 18 oz green beans
  • 1 cup ml cooking cream

Steps for preparing the green bean quiche

To prepare the delicious green bean quiche, watch the video recipe

  • Start by trimming the ends of the green beans and washing them under running water. Meanwhile, bring a pot full of water to a boil, salt it, and cook the green beans for 8-10 minutes until done. They should be al dente, not overcooked. Drain them with a colander and let them cool. If you want to preserve the bright green color, dip them in ice water.

    In a bowl, break the eggs and add the cream, and mix with a whisk. Then add the grated Parmesan cheese, salt, and the green beans. Mix again.

    Roll out the puff pastry or shortcrust pastry and pour the mixture. Level it with a fork or spatula, roll the edges of the pastry inward and bake in a static oven at 350°F for about 40 minutes, until golden, or in air fryer mode, at 400°F for 15-18 minutes. Check the cooking in the last few minutes as each oven works differently.

Storage and tips

The green bean quiche keeps for 2–3 days in an hermetic container or well-covered with plastic wrap.

It can be frozen whole or sliced and stored in hermetic containers or freezer bags.

I recommend slicing it before freezing so you only thaw the necessary amount.
