Sliced Chicken Sorrentina Style

Few ingredients, just as few are the minutes needed to prepare the sliced chicken Sorrentina style, and you’ll bring to the table a delicious, succulent, and very tasty dish that pleases the whole family, one of those dishes that makes you lick your lips 🙂

This dish encompasses all the flavors of Sorrento, the same as the gnocchi al tegamino, and it is precisely in a trattoria of the Sorrento peninsula that I tasted this very tasty dish. Try it, it will conquer you at the first taste 🙂

Ingredients

  • 8 slices chicken breast (If the slices are large, you can use 4)
  • 3 peeled tomatoes
  • 13.5 oz tomato sauce
  • 2 cloves garlic
  • 2 tablespoons grated Parmesan
  • 4.23 oz mozzarella
  • to taste extra virgin olive oil
  • to taste basil (if out of season, dried basil or oregano is fine)
  • to taste flour
  • to taste salt
  • to taste pepper

Steps

  • First, prepare the sauce and set it aside.

    Mash the peeled tomatoes.

    Heat some oil in a pan with a peeled garlic clove, once the garlic is slightly browned, add the mashed tomatoes with the sauce, salt, add a dash of pepper, cover with a lid and cook for a few minutes over high heat.

    While the sauce cooks, cut the mozzarella into pieces and let it drain in a colander.

    Flour the chicken slices well on both sides.

    In a large pan, put a drizzle of oil and the other peeled garlic clove, add the chicken slices and cook them well on both sides over low heat.

    As soon as the chicken is cooked, remove it from the pan and place it on a plate.

    Spread some tomato in the pan where you cooked the chicken, place the chicken on the tomato spread side by side, sprinkle grated Parmesan all over, and finish by placing some tomato on each chicken slice and spreading mozzarella here and there, sprinkle with chopped basil.

    Complete the cooking for a few more minutes at a very low flame and covered with a lid to melt the mozzarella.

  • Serve immediately with torn basil.
