The savory strudel with cheese and bacon is a very simple and quick rustic dish to prepare with a fabulous base and a very creamy and tasty filling.
Try it, it’s perfect for all occasions and will make the whole family happy.

Dough Ingredients:
- 1 lbs all-purpose flour
- 6 oz water (at room temperature, preferably sparkling)
- 2.4 oz extra virgin olive oil
- 0.4 oz instant yeast for savory preparations
- 1 and a half teaspoons of salt
- 2 tbsps white wine
- 14 oz cream cheese (like Philadelphia)
- 5 tbsps milk (you might need a bit more)
- 4 tbsps grated Parmesan
- to taste pepper
- 7 oz sliced bacon
- to taste poppy seeds
- to taste extra virgin olive oil
Tools

- 1 Rolling Pin
- 1 Pastry Board
- 1 Oven
Steps
Put the flour and salt in a bowl and mix, form a well in the center and add the wine, instant yeast, oil, and water, mix everything until a dough forms.
Transfer the dough to a pastry board and knead with your hands until you obtain a smooth and homogeneous dough that does not stick to your hands. If you need a bit more water or flour, add it.
Let it rest for 10 minutes at room temperature or in the fridge if it’s hot.
With Bimby:
Put the flour, yeast, and salt in the bowl 10 sec/speed 1, add the wine, oil, and water 3 min/knead.
Transfer the dough to a pastry board and knead with your hands until you obtain a smooth and homogeneous dough that does not stick to your hands. If you need a bit more water or flour, add it.
Let it rest for 10 minutes at room temperature or in the fridge if it’s hot.
Filling:
Put the cheese in a bowl, add the milk, a pinch of pepper and mix, add the Parmesan and mix again until it becomes creamy.
Keep in the fridge until needed.
Prepare the strudel:
After the dough has rested, preheat the oven to 350°F.
Roll out the dough with a rolling pin on a floured surface into a rectangle half a centimeter thick.
Cover with the cheese cream, leaving 0.8 inches all around.
Cover the cheese cream with bacon, and roll the rectangle leaving the long side until it forms a roll, close the edges well by folding them underneath, transfer the savory strudel to a baking tray lined with parchment paper with folds facing down.
Brush with oil and sprinkle with sesame seeds.
Bake in a hot oven in the middle/lower part for about 30 minutes until it turns golden.
Remove from the oven, let cool for 10 minutes and serve; it’s also great warm or cold.
