Snowball Cookies.
Simple, quick, delicious.
Snowball Cookies are delightful American treats typically enjoyed during the winter and especially around Christmas. Their name comes from their snowball-like appearance, all white due to the powdered sugar coating.
Snowball Cookies are very quick and easy to make, they melt in your mouth with their unique eggless dough. They are fragrant and delicious with a slightly sweet almond or walnut dough covered in lots of powdered sugar.
Try them, they’re delicious and perfect with a nice cup of coffee or tea. If you package them in paper cups and then in a tin box, they can make a lovely gift for friends and family. Now, let’s prepare these delicious cookies, you’ll see how tasty they are 🙂

Ingredients
- 1 1/4 cups all-purpose flour
- 1 1/4 cups blanched almonds (walnuts for the original version)
- 10 1/2 tbsp butter (at room temperature)
- 2/3 cup powdered sugar
- 1 tsp vanilla extract
- 1 pinch salt
- as needed powdered sugar (for finishing)
Tools
- 1 Blender
- 1 Electric Whisk
- 1 Bowl
- 1 Spatula
- 1 Baking Tray
- 1 Oven
Steps
First, toast the almonds or walnuts for 7 minutes in a preheated oven at 356°F, or for 1 and a half minutes in the microwave. Let them cool slightly.
Use a mixer to grind the almonds or walnuts into flour.
Put the butter in a bowl, add the powdered sugar, and work with an electric whisk at the minimum speed, then increase it once the sugar is incorporated. The mixture should become creamy.
Add the vanilla, pinch of salt, and flour, and continue using the whisk.
Then add the almond flour and use a spatula and then your hands to form a homogeneous dough (if needed, add a tablespoon of water). The dough should be firm and not stick to your hands like shortcrust pastry.
Wrap it in cling film and refrigerate for 15-30 minutes.
After the resting time in the fridge, preheat the oven to 356°F.
Line a large baking tray with parchment paper.
Scoop out some dough with a spoon, and use your hands to form a ball the size of a walnut. Place it on the tray.
Continue this way until all the dough is used up, spacing the balls on the tray.
Bake at 356°F for about 12 minutes (adjust based on your oven, they should lightly brown).
Once the cookies are baked, remove them from the oven, let them cool slightly, and while still warm, cover them with powdered sugar (I prefer to roll them in sugar rather than covering them completely, but if you want them even whiter and sweeter, dust them with more powdered sugar after rolling).
Let them cool completely before serving.

Place the almonds or walnuts in the cup and grind them into flour for 30 secvel 10. Transfer the almond flour to a bowl.
Without needing to wash the cup, add the butter, powdered sugar, and work for 30 secvel 2.
Add the vanilla, pinch of salt, and flour, and work for 30 secvel 3.
Then add the almond flour and work for 20 secvel 3. Transfer the dough to a bowl and knead quickly with your hands to form a homogeneous dough (if needed, add a tablespoon of water). The dough should be firm and not stick to your hands like shortcrust pastry.
Wrap it in cling film and refrigerate for 15-30 minutes.
