The spiced shortcrust pastry for Christmas cookies is a very simple base to prepare, perfect for delicious Christmas cookies as well as fragrant tarts. Ingredients

  • 2 3/4 cups all-purpose flour
  • 1/3 cup potato starch
  • 2/3 cup butter (at room temperature)
  • 3/4 cup powdered sugar (or cane sugar for a more rustic taste)
  • 1 egg
  • 1 egg yolk
  • zest of one organic orange
  • zest of one untreated lemon
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp honey

Tools

  • 1 Pastry Board
  • 1 Sifter

Steps

  • Mix together the sugar with the sifted flour, cinnamon, ginger, starch, and sifted baking powder.

    Place this mixture in a mound on a pastry board, add the butter in pieces, and start kneading until you get a crumbly dough.

    At this point, make a well in the center where you will put the eggs, honey, grated orange and lemon zest, and a pinch of salt. Knead with your fingertips and then quickly with your hands to form a smooth and homogeneous dough.

    Shape into a ball and place it in a clean cloth or food wrap for at least 30 minutes in the fridge.

  • Put the flour and sugar, cinnamon, ginger, starch, and baking powder in the bowl 3 seconds speed 3.

    Add the butter in small pieces 30 secspeed 4.

    Add the eggs, honey, grated orange and lemon zest, a pinch of salt 20 secondsspeed 5.

    Transfer the dough to a lightly floured pastry board and knead it slightly by hand.

    Place the dough in a clean cloth or food wrap for 30 minutes in the fridge.

  • The spiced shortcrust pastry for Christmas cookies is ready to be rolled out and cut into all your favorite shapes.

    The cookies should be baked at 356°F for about 10 minutes, but adjust according to your oven, they should be golden.
