Canapés are small appetizers meant to be eaten in one bite, they are quick to prepare and delightful, perfect as an appetizer or to serve with bubbles or a cocktail.

Ingredients
- 8 slices sandwich bread
- 2 tbsps butter (at room temperature)
- 16 shelled shrimps
- 8 cherry tomatoes
- 7 slices Neapolitan salami
- 20 pitted green olives
- 8 slices cooked ham
- to taste pink peppercorns
- to taste pepper
- 2 egg yolks
- 1 cup cup corn oil
- 2 tbsps lemon juice
- 1 pinch salt

- 1 Immersion Blender
- 1 Knife
Steps
First, prepare the mayonnaise (alternatively, you can use the ready-made one available in supermarkets).
To make it at home, blend the eggs with the lemon juice and a pinch of salt.
Slowly add the oil while blending until you obtain a smooth and creamy mixture, then refrigerate for 10 minutes.
You can also prepare the mayonnaise with the Thermomix:
Place the eggs with the lemon juice and a pinch of salt in the bowl, 1 min / speed 5.
With the speed set to 5, add the oil slowly through the lid opening, when the oil is finished, increase to speed 7 / 10 sec.
With the mayonnaise ready, we can prepare our canapés.
1st flavor) Cut a piece of cling film slightly longer than the slice of sandwich bread, place the slice of sandwich bread on it, spread with mayonnaise, cover with cooked ham and roll it up to form a roll, wrap in the cling film and place on a tray, do the same with another roll filled with mayonnaise and cooked ham, refrigerate while preparing the others.
2nd flavor) Cook the shrimp by immersing them in boiling water for 30 seconds, once they curl up a bit, they are ready.
Cut the cherry tomatoes in half
Spread mayonnaise on a slice of sandwich bread and cut it into eight rectangles, place the 8 obtained tartlets on a large tray in which you will serve them and top each with 1 shrimp and half a cherry tomato, do the same with another slice of sandwich bread, add a dash of pepper.
3rd flavor) Spread soft butter on a slice of sandwich bread and cut it into 10 squares, place the 10 obtained tartlets next to those with shrimp and garnish each with a little crushed pink pepper (alternatively, lumpfish roe) and a pitted olive, do the same with another slice of sandwich bread.
4th flavor) Spread mayonnaise on 1 slice of sandwich bread, cut into 3 equal parts, and then again into 2 diagonally, forming 6 triangles, place half a slice of salami (alternatively you can use salmon) in the center of each triangle, place the obtained triangles on the tray, do the same with another slice of sandwich bread.
1st flavor) Retrieve the rolls from the fridge, cut them into slices about half an inch thick with a sharp knife, place the obtained pinwheels on the tray along with the others (if you don’t have a large enough tray, you can arrange the canapés on 2 trays).
