Tasty meat skewers are a simple and very appetizing main course perfect for any occasion and for the whole family, a different and very tasty way to prepare simple slices of carpaccio.

Ingredients

  • 1.1 lbs veal carpaccio
  • 4.6 oz stale bread
  • 1 clove garlic
  • 2 bunches parsley
  • 3.5 oz grated Parmesan cheese
  • 3.5 oz fontina cheese
  • herbs to taste (thyme, marjoram, sage)
  • to taste pepper
  • to taste extra virgin olive oil
  • to taste salt

Tools

  • 1 Blender
  • 1 Cutting Board
  • 1 Baking Pan

Steps

  • Put the stale bread in the blender and grind it into powder, add some sprigs of parsley, a bit of thyme, marjoram, a dash of pepper, a little oil, garlic, and grated cheese, blend everything finely, set aside.

    Grate the fontina with a coarse grater.

    Lay the slices of meat one at a time on a cutting board and cover them with an even layer of the aromatic breadcrumb mixture, place a bit of fontina on the breadcrumbs.

    Roll the filled meat onto itself forming a roll that you will then cut into pieces about 1.5 inches long, skewer the pieces one by one onto a skewer.

    Proceed in the same way by filling, rolling, and cutting the other slices of meat into rolls; each skewer should have about 6 small meat rolls.

    Once all the skewers with the various rolls are completed, brush them with oil and roll them in the remaining aromatic breadcrumbs externally as well.

  • Once all the skewers are ready, we can proceed to cook them. You have two options:

    1) Oven Cooking: Preheat the oven to 350°F static and let it heat up, place the skewers on a baking tray covered with parchment paper and oiled, drizzle lightly with a little oil on top and bake for about 18 minutes, checking occasionally, the skewers should brown but not dry out.

    2) Pan Cooking: Heat a little oil in a pan and cook the skewers, browning them on both sides.

  • Serve immediately accompanied by a simple salad, or with sautéed fresh mushrooms, or pan-cooked peas, or pan-cooked potatoes.
