The mandarin bundt cake is a special dessert with an indescribable aroma and scent that takes you back to the flavors of the past, to those orange cakes typical of winter at grandparents’ homes, those soft and genuine cakes that melt in your mouth.

The mandarin bundt cake is a genuine dessert with a unique softness and flavor, simple and quick to prepare, perfect for starting the day with something healthy and delicious, or as a snack, a special cake that wins everyone over at the first taste.

This is my mom’s recipe, and I recommend it because it’s incredibly delicious 🙂

Ingredients

  • 4 large eggs (at room temperature)
  • 1.25 cups sugar (0.65 cups for a less sweet version)
  • 4 mandarins (Juice)
  • grated zest of 2 mandarins
  • 2.4 cups all-purpose flour
  • 0.3 cups potato starch (you can alternatively use another 0.3 cups of flour)
  • 0.42 cups milk (at room temperature)
  • 0.42 cups corn oil
  • 1 pinch salt
  • 1 packet baking powder (16 g)
  • as needed butter and powdered sugar

  • 1 Electric Whisk
  • 1 Bundt Pan
  • 1 Grater
  • 1 Citrus Juicer
  • 1 Bowl
  • 1 Spatula
  • 1 Oven

Steps

  • Butter a 9.5-inch bundt pan.

    With electric beaters or a stand mixer, beat the eggs with the sugar, a pinch of salt, and the grated zest of 2 mandarins.

    Sift the flour with the potato starch and baking powder.

    Juice the mandarins and strain the juice.

    Preheat the oven to 340°F static.

    Add the oil, milk, and orange juice to the egg mixture and mix well.

    Gradually add the flour mixture with a spatula, folding gently from bottom to top.

  • Pour the mixture into the buttered pan and bake at 340°F for about 40 minutes, perform the toothpick test.

    Once the mandarin bundt cake is baked, remove it from the oven, let it cool, and then place it on a serving plate and dust with powdered sugar.

  • Butter a 9.5-inch bundt pan.

    Grate the zest of 2 mandarins, juice the others and strain.

    Preheat the oven to 340°F static.

    Put the mandarin zest and sugar in the bowl for 8 seconds/speed 8.

    Add the eggs, pinch of salt, milk, mandarin juice, and oil 30 seconds/speed 8.

    Also add the flour, starch, and baking powder 1 minute/speed 7.

    Scrape down the sides of the bowl and work for another 30 seconds/speed 4.

    Pour the batter into the buttered pan, bake in the preheated oven at 340°F for about 40 minutes, then perform the toothpick test, it should come out dry, otherwise bake for a few more minutes.

    Once the mandarin bundt cake is baked, remove it from the oven, let it cool, and place it on a serving plate, dust with powdered sugar.
