Banana Bundt Cake.
Simple, super soft, delicious.
The banana bundt cake is a very simple, fragrant, and delicious dessert. The super soft dough is enriched with lots of banana pieces that give it a creamy touch. Try it; it’s perfect for the whole family and will win everyone over at the first bite.

Ingredients
- 4 eggs (large at room temperature)
- 5 oz sugar
- 2.5 cups all-purpose flour (plus some for flouring the bananas)
- 0.4 cups potato starch
- 1 container yogurt (125 g, I use vanilla flavor)
- 2/3 cups corn oil
- 1 tsp vanilla essence
- 1 packet baking powder
- juice of one lemon
- grated zest of 1 untreated lemon
- 1 pinch salt
- 2 bananas (not overly ripe)
- as needed butter (for greasing the mold)
- as needed powdered sugar

- 1 Bowl
- 1 Mold
- 1 Spatula
- 1 Oven
Steps
Preheat the oven to 340°F static and grease a 9.5-inch Bundt cake mold.
With an electric mixer, beat the eggs with sugar and a pinch of salt.
While still beating, add the oil, lemon juice, vanilla essence, then the yogurt, and the grated lemon zest.
Sift the flour, potato starch, and baking powder, and add it to the egg mixture by hand with a spatula.
Peel the bananas and slice them, flour them, and add them to the batter with the spatula.
Once the batter is homogeneous, pour it into the greased mold.
Bake at 340°F for about 40 minutes. Check with a skewer (If it’s cooked, it should come out dry; otherwise, continue baking for a few more minutes).
Let the cake cool, place it on a platter, dust with powdered sugar, and serve.

Place the butterfly whisk in the bowl.
Separate the yolks from the whites.
Put the egg whites with a pinch of salt in the bowl for 3 minutes/speed 4.
Set them aside in a bowl.
Put the yolks in the bowl with the sugar, grated lemon zest, and beat for 2 minutes/Speed 4.
Remove the butterfly whisk and add the flour, potato starch, oil, lemon juice, and yogurt. 50 Sec./Speed 3.
Add the baking powder 20 Sec./Speed 3.
Turn off the Bimby and add the egg whites a little at a time, mixing with a spatula from bottom to top.
Peel the bananas and slice them, flour them, and add them to the batter with the spatula.
Once the batter is homogeneous, pour it into the greased mold.
Bake at 340°F for about 40 minutes. Check with a skewer (If it’s cooked, it should come out dry; otherwise, continue baking for a few more minutes).
Let the cake cool, place it on a platter, dust with powdered sugar, and serve.
