Ingredients for Chickpea Hummus
- 1 cup canned chickpeas (drained weight)
- 1/4 cup lemon juice
- 3 tbsps tahini
- 2 tbsps extra virgin olive oil
- 1/2 clove garlic (optional)
- to taste salt

- to taste chopped parsley
- to taste extra virgin olive oil

Preparation of CHICKPEA HUMMUS
Drain the chickpeas and rinse them under running water, then transfer them to a mixer.
Add the lemon juice and half a clove of garlic with the core removed (if you don’t like garlic, you can skip it).
Also add the tahini, olive oil, and a pinch of salt.
Turn on the mixer and blend until you get a cream (you decide if you want a smooth and creamy hummus or a more rustic one). If needed, you can add a few tablespoons of water.
When the hummus is ready, pour it into a bowl and garnish with a few pinches of pepper, chopped parsley, and extra virgin olive oil.
