Grilled stuffed turkey rolls are very easy, light, quick to make, and above all very tasty, thanks to their filling of grilled zucchini and prosciutto. It’s a succulent second course that can come in handy when there are unexpected guests, when you don’t want to eat the usual grilled fillet, or when you have vegetables, ham, or cheese to use up. Like all my recipes, turkey rolls can be customized according to your needs and tastes, stuffing them with cheese, or using eggplants or mushrooms instead of zucchini, etc… I served the rolls with a deliciously spiced chickpea and spice cream, which pairs wonderfully with turkey.

Ingredients
- 8 slices Turkey thighs
- 4 slices Prosciutto
- 8 slices Grilled zucchini
Preparation
Prepare some toothpicks to secure the rolls.
Heat a grill pan thoroughly.
Meanwhile, pound the turkey slices all around with a meat mallet, using a motion that goes from the center of the slice outward. The slices thus thinned will be softer and cook faster.
Grill them for a few minutes on both sides until they are perfectly cooked. Do not extend the cooking time excessively to avoid drying them out.
Meanwhile, season the zucchini, according to your tastes and habits, with salt and extra virgin olive oil, etc…
When all the turkey slices are ready, start filling them with prosciutto slices (dividing them if they are large), then add the zucchini.
Roll up our rolls and secure them with toothpicks. Serve them hot or warm, perhaps accompanied by a delicious chickpea cream.
If the rolls are too large, we can cut them in half after filling them. This way, we will form “bites” suitable for a buffet.
For an extra idea: we can spread a thin layer of chickpea cream directly on the turkey slices and then add the prosciutto and zucchini before rolling up the rolls.
Notes
To make the turkey meat even more tender, we can marinate it for at least an hour with a bit of dry white wine or milk.
