- 1 lb chicory
- 1/2 onion
- vegetable broth
- pepper
- salt
- extra virgin olive oil

Let’s start preparing
let’s start preparing the chicory soup: clean the chicory by removing the ends and cutting the leaves in half.
Boil the chicory in a pot of boiling water for 5 minutes.
Drain it, set it aside.
Now prepare the seasoning: in a pan heat a drizzle of extra virgin olive oil, flavor with chopped half onion.
Add the chopped chicory and cover completely with vegetable broth
Let it simmer for 13 minutes. Finish with freshly ground pepper and serve the soup hot.
