Today I prepared flavorful vegetables, my favorite side dish this season. I love zucchini, as you know there are many recipes on the Blog.
Today I made them simple but delicious with eggplants, we are crazy about them at home. And they are great both hot and cold. So perfect to eat even under the beach umbrella. For cooking, I preferred the air fryer but you can easily use the oven or microwave. If you also love vegetables like me, I leave you some other ideas.

Ingredients
- 2 zucchini
- 2 eggplants
- 2 cloves garlic
- 2 sprigs parsley (I use dried)
- to taste oil and salt
- a few basil leaves

- Air Fryer
- Knife
Steps
Wash the vegetables, remove the ends, and cut them into chunks.
Place them on an air fryer-safe mold and season with oil and salt. Cook them at 392°F for about 20 minutes.
Add the dried or fresh parsley, minced garlic, and basil.
Mix and serve.
Good hot or cold.
