Yogurt and Apple Loaf Cake

Yogurt and apple loaf cake for a simple snack or breakfast. You’ll love it from the very scent of vanilla and cinnamon that will fill your house, a cake that will brighten your autumn days, perhaps in front of a steaming cup of tea or coffee. I have enriched this loaf cake with the addition of walnuts and raisins, but you can add whatever you prefer (hazelnuts, pine nuts, chocolate chips).

Ingredients

  • 2 1/3 cups all-purpose flour
  • 3 eggs
  • 3/4 cups brown sugar (Or white)
  • 2 containers Yogurt (Vanilla)
  • 1/2 cup sunflower oil
  • 3 apples
  • as needed lemon (Juice)
  • 1 packet baking powder
  • as needed walnuts
  • as needed raisins
  • as needed ground cinnamon
  • as needed powdered sugar

  • 1 Loaf pan 9-10 inches

Steps

  • Beat the eggs with the sugar until the mixture becomes light and frothy. Incorporate the oil completely. Gently add the yogurt. Add the sifted flour along with the baking powder and cinnamon in several additions until you achieve a smooth batter.

  • Now add the apples cut into thin slices or cubes, previously kept in lemon juice. If you like, add the walnuts and raisins, previously soaked in water or rum.

  • Grease and dust with breadcrumbs or flour a small loaf pan and add the batter. Optionally, add some crumbled walnut pieces on top.

  • Bake at 340-355°F in a preheated static oven for about 50 minutes. The time may vary depending on the oven; after 40 minutes, conduct the toothpick test, and if it’s still raw, continue baking.

  • Once cooked, let it cool slightly and transfer to a platter. When the loaf cake is cold, sprinkle generously with powdered sugar and enjoy it 😋
