- 1/2 cup fresh cream
- to taste extra virgin olive oil
- to taste salt
- 1 tablespoon green peppercorns

Procedure
The secret to a good pork tenderloin with green peppercorns lies in the cooking of the meat and the creation of the cream and green peppercorn reduction. Here are the steps to follow
First, I recommend cutting the pork tenderloin into medallions (about 1-1.5 inches thick). For optimal cooking, the meat should be at room temperature, so take it out of the refrigerator at least 30 minutes before cooking.
Place a skillet with a dash of extra virgin olive oil on high heat. Let it heat for a couple of minutes on high heat and then lower to medium-high heat.
Now that the skillet is hot, cook the pork tenderloin. After 3-4 minutes, flip the meat to the other side and complete the cooking.
When the meat is cooked, add the cream and green peppercorns and cook over medium heat for 3-4 minutes. The cream should thicken and become almost creamy.
If you’ve used green peppercorns in brine, just add a little salt. If you’ve used dried peppercorns, salt the meat at the end of cooking.
