Tasty boiled carrot salad.
Do you like boiled carrots? I really don’t! Those who follow me know very well that vegetables, unfortunately, have never been among my favorite foods. They also know that since you can’t live on sweets alone, as I would like to do, sometimes even I have to make the sacrifice to eat them. So I have to come up with tricks, like you would for children, to make them appealing to me. I must confess that boiled carrots, among other things, are really among the vegetables I like the least, perhaps second only to my arch-nemesis beets. So here I am seasoning them with simple but tasty ingredients, easily available, to make this boiled carrot salad delicious, even for my picky palate!

Ingredients
- 14 oz carrots
- 1 tbsp mayonnaise
- 1 tbsp lemon
- 1 tsp mustard
- to taste olive oil (10)
- to taste salt
- 1 tsp chopped parsley

Steps
This recipe is really simple to prepare. Trim and gently scrape the carrots with a serrated knife or a peeler.
In the meantime, you will have brought lightly salted water to a boil.
Boil the carrots in boiling water for 10/15 minutes depending on their size. Drain them when they are cooked and cut into slices.
Place the carrots in a large bowl and dress them with the sauce you prepared by mixing in a small bowl the mayonnaise, mustard, lemon, oil, and salt. Mix well with a spoon.
Now add the chopped parsley to the dressed carrots and mix again.
Your tasty boiled carrot salad is ready, taste it and adjust the salt if needed.

I recommend letting the dressed carrots sit for an hour; they will taste even better.
