- 1.4 oz Pecorino Romano
- 2 eggs
- 1 tbsp milk
- 1 pinch salt
- to taste extra virgin olive oil

Procedure
To make the perfect pumpkin flan, follow the recipe carefully and present a dish that will impress everyone.
Now, grab your aprons and get ready to get hands-on! Start by peeling and cutting the pumpkin into cubes.
In a pot, cook the pumpkin until it becomes soft and easily malleable. Once cooked, mash it with a fork or pass it through a sieve to achieve a smooth and silky texture.
At this point, it’s time to start mixing! In a bowl, combine the pumpkin puree with the eggs, milk, and grated cheese.
Season everything with salt and pepper to taste. Now, mix vigorously until you obtain a homogeneous and creamy mixture.
Take 2 small individual molds and grease them with a bit of oil or melted butter to prevent the flan from sticking. Pour the mixture into the molds, filling them up to about three-quarters of their volume. Smooth the surface with the back of a spoon to get an even look.
At this point, preheat the oven to 350°F and place the molds on the middle rack. Bake the pumpkin flan for about 25-30 minutes or until the surface appears golden and slightly puffed. Once ready, take the flans out and let them cool slightly before serving.
