Ingredients for 2 people

  • 10.5 oz pumpkin (baked)
  • 1.4 oz Pecorino Romano
  • 2 eggs
  • 1 tbsp milk
  • 1 pinch salt
  • to taste extra virgin olive oil

Tools

  • 1 Bowl
  • 1 Spatula
  • 2 Molds

Procedure

To make the perfect pumpkin flan, follow the recipe carefully and present a dish that will impress everyone.

  • Now, grab your aprons and get ready to get hands-on! Start by peeling and cutting the pumpkin into cubes.

In a pot, cook the pumpkin until it becomes soft and easily malleable. Once cooked, mash it with a fork or pass it through a sieve to achieve a smooth and silky texture.

  • At this point, it’s time to start mixing! In a bowl, combine the pumpkin puree with the eggs, milk, and grated cheese.

Season everything with salt and pepper to taste. Now, mix vigorously until you obtain a homogeneous and creamy mixture.

  • Take 2 small individual molds and grease them with a bit of oil or melted butter to prevent the flan from sticking. Pour the mixture into the molds, filling them up to about three-quarters of their volume. Smooth the surface with the back of a spoon to get an even look.

At this point, preheat the oven to 350°F and place the molds on the middle rack. Bake the pumpkin flan for about 25-30 minutes or until the surface appears golden and slightly puffed. Once ready, take the flans out and let them cool slightly before serving.

    Your pumpkin flan is ready!

Pumpkin Flan Wine Pairing:

This dish pairs well with a medium-bodied White Wine, such as an Erice Grecanico Dop. This pleasant, delicate, more or less fruity wine appears with a straw yellow color with more or less intense greenish reflections.
