Procedure
The secret to a grilled chicken breast lies in the cooking, which must be at a high temperature to seal the meat and retain its juices.
First, I recommend starting with a whole chicken breast and slicing it into pieces 0.79 inches thick. Thicker chicken tends to dry out less, resulting in a juicier final product.
Don’t go beyond 0.79 inches as you risk leaving the chicken raw inside, and consuming raw chicken is very dangerous to health.
Place a grill on high flame, when it’s hot, it’s time to position the meat for cooking, sizzle it well for 4-5 minutes on each side.
The meat should not be salted until the end of cooking to avoid extracting the juices and making it dry and tough.
Once cooked, after removing the chicken from the grill, let it rest for a minute and finish with salt, a grind of pepper, and a drizzle of extra virgin olive oil.
