Procedure

The secret to a grilled chicken breast lies in the cooking, which must be at a high temperature to seal the meat and retain its juices.

  • First, I recommend starting with a whole chicken breast and slicing it into pieces 0.79 inches thick. Thicker chicken tends to dry out less, resulting in a juicier final product.

    Don’t go beyond 0.79 inches as you risk leaving the chicken raw inside, and consuming raw chicken is very dangerous to health.

  • Place a grill on high flame, when it’s hot, it’s time to position the meat for cooking, sizzle it well for 4-5 minutes on each side.

    The meat should not be salted until the end of cooking to avoid extracting the juices and making it dry and tough.

  • Once cooked, after removing the chicken from the grill, let it rest for a minute and finish with salt, a grind of pepper, and a drizzle of extra virgin olive oil.
