- 12 oz chicken breast
- 3 artichokes
- 2.5 oz smoked bacon (or sweet, diced)
- 1 clove garlic

- rice flour (or all-purpose flour)

Preparation
Clean the artichokes by removing the outer leaves, tips, and any internal fuzz. Cut them into wedges and immerse them in a bowl with water and lemon juice to prevent browning.
If you also have the stems, peel them and cut them into thin rounds.
Cook the artichokes in a pan, with a drizzle of oil, a clove of garlic, and a pinch of salt, for about 10 minutes, or until tender (1). To facilitate cooking and make them softer, pour a little hot water on the bottom.
Clean the chicken breast by removing small bones and nerves, cut it into bites and coat it in rice flour.
Place it in another pan, along with the bacon and a drizzle of oil. Brown it for a few minutes over high heat (2).
Add a splash of hot water (or broth) to make the sauce creamier and thicker, then add the previously cooked artichokes (3).
Mix, adjust salt and pepper, and continue for a few more minutes until the meat is cooked. Finally, add a handful of chopped parsley.
Chicken breast with artichokes and bacon is ready, tender and tasty, just transfer it to a platter and serve.

You can use 3 small artichokes or 2 larger ones. Off-season, you can also use frozen artichokes.
