Ingredients for 2 people
- 10.5 oz sausages
- 1 1/4 cups tomato purée
- to taste salt
- 1 bunch basil

Procedure
The trick to a good stewed sausage is cooking it in a pan without tomato sauce. This way, the sausage releases its juices and is ready to flavor the tomato with slow cooking.
Take the fresh sausages and sauté them in a hot pan over high heat for a couple of minutes, so they brown on the outside.
During cooking, the sausage will release its fats. You can prick them with a fork and remove the fat from the pan before adding the tomato sauce.
Now that the sausage is cooked, you just need to add the tomato sauce. Lower the heat and continue cooking with the lid on for another 15 minutes.
Now that the sausage is cooked and the sauce is flavored, you can choose the desired thickness.
For a thick sauce, finish cooking in the last 5 minutes over medium heat without the lid.
Your stewed sausage is ready!
Plating Tips:
A basil leaf and some bread croutons for dipping, in winter you can serve it with polenta or pan-fried polenta croutons.

I recommend a full-bodied red wine capable of enhancing the flavor of the meat and the acidity of the tomato sauce, such as a Cannonau or a Sangiovese.
